Banana Muffins!

Im going to cheat here and use pics from a while ago. Im making these tomorrow as ive never stopped today changing the furniture around the living room to make room for the Christmas tree! We are never usually this late putting it up but we finally have the space for it to go up tomorrow :)

Delicious Banana Muffins

Ingredients:

200g plain flour
1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
3 large bananas, mashed
150g caster sugar
1 egg
75g butter, melted

Dried banana chips for decoration
Method:

1. Preheat oven to 180 degrees c and line a baking tray with 12 muffin cases.
2. Sift together flour, bicarbonate of soda, bakind powder and salt.
3. Combine bananas, egg, sugar and melted butter in a bowl. Add flour and mix until smooth.
4. Spoon into the muffin cases. Add dried banana chip to top of mix.5. Bake for 25/30 mins or until golden and springy.Enjoy xxx

  2. This is very similar to a banana loaf I make - absolutely delicious! Must try as muffins with the banana chip!

    You aren't alone - we are putting our tree up tomorrow though goodness knows where.
