Sweet mince muffins, banana muffins and the start of chocolate OD!!

I took some pics today of the banana muffins which i posted the recipe for yesterday - i swear its so simple and takes maybe 30 mins from getting the ingredients out to popping them on the cooling rack! :)
Batter mix...Ready for the oven...Drenched in icing sugar ( honest...its not me its the baby!)...
Then i made Sweet Mincemeat muffins.

It is simply adapted from the Banana recipe but where you would add 3 bananas, substitute with 2 small bananas and 3 heaped desert spoons (and i mean heaped) of sweet mince straight from the jar. Top with a sprinkle of cinnamon and some glace cherries that have been chopped. Bake for 25 mins until golden brown :)The top layer is lovely and chewy with a really soft spongy centre - delicious!! Finish with a sprinkling of icing sugar (at Christmas everything has to be 'snowtopped' doesnt it??) lol :)

To answer a couple of questions...The mixer i have is a Kenwood Patissier - i love it and would be lost without it now! :)
I know a few think im either wonderwoman or have help and i have to say no to either :) I have never had help (...we havent even hired a baby sitter!) lol I love being busy and thrive on stress and deadlines so i love what i do and the more i can fit in a day then the better - i feel a lot worse in myself if i dont do my lists!! lol

And finally - I found this chocolate in Lidl yesterday and it is only 99p a bar!! 70% cocoa and is the base of the truffles i started to make today so will see how it goes :D

For now though its back to tree trimming....why is it each year i go through the decorations and keep saying ' ooh i forgot we had this' or ' oh do you remember when we got this' lol Tell me im not alone!! LOL

  1. Well I think you are ace and an inspiration to us all Debbie. I have soaked my fruit ready to make those choccy alcohol dried fruits as gifts and I bought some extra strong mints in my supermarket shop today.
    That chocolate looks good and a bargain. Please can you let me know what it is like?

    Banana muffins were delish and i'm going to have to try these tomorrow now.
    Am I a bad Mummy in thinking the banana ones would be great for the kiddies for breakfast lol. I justify by thinking most cereals are full of sugar anyway 'hehe'

    I know exactly what you mean with all the Christmas decorations. I hadn't realised how much we'd got stored away and we've only been collecting it for 4 years! lol
