Chicken & Leek Pie with Filo Topping - week 14 :)

Preheat oven to 190 degres C.

Gather all your ingredients together, slice the leeks, cut the chicken and ham to bite size pieces and make up the chicken stock. Melt the butter in a large pan and gently cook the leeks for 10 minutes. Add the flourOnce combined completely add the stock and cream. Next add the chicken, ham and sweetcorn, mix well and leave to cook through for 5 minutes. Move from the pan into an ovenproof dish. Tear the filo pastry into wide strips, scrunch up and place on top of the the pie mix. Cook for 35/40 minutes. We had it with mashed potato which was lovely as the cream from the pie mix combined with the potatoes so there was no need for additional Philli etc in the mash :)

Here are a couple of projects ive made today for the Hero Arts April challenge - the theme is Home or Mothers.

Ive used my fave birdhouse template to make another 3D card and popped lots of embellishments and stamps etc on it! Total OTT but i love it and would move in tomorrow! :D This one was using the Heart Flourishes background (HUGE!!) and Wonderfully Whimsical stamps again from Becky Oehlers! :)

    That chicken and leek pie looks gorgeous - although I've eaten already, I'd happily have tea again if that was on the menu.
    Both cards are truly gorgeous but I'm in love with the little bird house one - it's so sweet.

  9. I make something very similar to the pie except it's not a pie it's a chowder. The ingredients are virtually the same but instead of cream and stock the chowder has milk, diced potatoes are added too. I expect the pie is delicious and will try it soon :)

  10. Wowww is all i can say, cooked it this evening and served it up with my home made rolls and mash and it was delicous and very filling. Hubby and my boys loved it too so another meal i can add to my family meal planner :) Thankyou so much for posting x
