Week 6 - Vegetable Cobbler! *shopping list*

Ive always wanted to make a cobbler but its usually been of the sweet variety so depending on how this one goes we may also fit a peach cobbler or similar into one of the desert weeks :D Yummm!!

Here we go with week 6...

Shopping List

Serves 4-6
4 small onions, quartered
2 sticks celery, sliced
8 oz button mushrooms, sliced
1/2 small cauliflower, broken into florets
8 oz swede, chopped
2 carrots, sliced
1 tbsp olive oil
1 clove garlic, crushed
14 oz can chopped tomatoes
2 oz red lentils, rinsed
2 tbsp cornflour
3-4 tbsp water
10 floz vegetable stock
2 tsp tabasco sauce
2 tsp oregano

Topping

8 oz self raising flour
4 tbsp butter
pinch of salt
4 oz mature cheddar, grated
2 tsp oregano
1 egg, beaten
5 fl oz milk

I cant wait to try this one, sometimes you just get sick of meat and need something else! As we are a proper 'comfort food' home im hoping this one is accepted by the males of the house!!

  3. This sounds like it's going to be another yummer! I've only ever made turkey or Quorn cobbler so looking forward to this... and yes, ours comes out as proper comfort food ;)

    I love the way you are doing one week savoury and the next sweet btw ;)
