Week 8 - Spinach and Cheese Muffins *shopping list*

This is a breakfast muffin that is taken from the Hummingbird Bakery Recipe book - i havent tried it myself yet so im interested to see how it turns out too! LOL Ive always associated muffins with being a sweet dessert type food but maybe this will change the way i look at them - are you with me on trying it out??

Shopping List
30 grams butter
1/2 small red onion, finely chopped
360 grams plain flour
2 1/2 tsp baking powder
1 tsp cayenne pepper
250 grams Cheddar Cheese, grated
220 ml whole milk
1 egg
130 grams baby spinach leaves

12 hole muffin tray lined with paper cases.

    Oooo, they sound interesting. We are just back from London and passed the Hummingbird cake shop. It looked lovely but was shut when we were passing:(

  6. Well I've made the chocolate brownies from said book & they were fab. In fact I'm baking some later this week to take into work for the GOSH Bake It Better charity.

  8. We did some spinach and cheese muffins here last year, very yummy, especially with soup - there's just one thing though... you have to get over the fact that they are green! Eating them at work caused quite a debate about coloured food!
