Are you ready to bake??

When my 6 year old tasted the carrot cake and announced ' Ive found love!!' i realised this one was a winner! (especially since he doesnt like nuts!) LOL

Lots of pics for a very simple cake, lets start off easy.....

Preheat oven to 180 degrees c...

Gather all your ingredients from mondays shopping list and add them ALL straight into a mixing bowl..(unless you really like washing up theres no need to pop them in seperate dishes like i did - that was just for pic purposes!) lol
Either hand mix or using a mixer on SLOW speed combine all the ingredients until the mix is smooth...
Grease your 8in tin - i use the 1cal spray oil. Its so much easier and works really well, doesnt taint the taste of the food and is so much easier than wiping the tin out with butter or lining with greaseproof paper.

Add the mix and level off the top. Bake in the preheated oven for 50/60 minutes or until a cake skewer comes out clean.
I made 3 lots of this mix seperately and it makes either 1 inch cake, 8 mini loaves (bake for 30mins) or 12 muffins (bake for 25/30mins).
Leave to cool completely before making up your frosting.
Like you did for the main cake, gather together all of your frosting ingredients and add to a food processor or bowl and mix together until smooth and creamy.
Apply to your cakes and finish with decoration of your choice. Chill slightly before eating to harden up the frosting. (theres no pretty way to decorate the loaves but i think the cupcakes look fab and they wont last 5 minutes anyway - this is going to be a regular make in this house!)
Instead of adding the frosting to the top of my large cake i split it in half and sandwiched it together, dusting with icing sugar to finish :)
YUMMM......cup of coffee and a slice of carrot cake while i type this all up - im going to love 2010!

  7. Fantabulous!! Looks really easy, too. As soon as this wretched snow stops, I'll go out and get the rest of the ingredients. It all looks very pretty but people will insist in walking or driving over it and spoiling it!!!!

    Spicyapplepie - of course its good for the diet plus because it contains carrots and bananas thats two of your 5 a day! ;) Have 2 and a half pieces and you dont need to eat anymore veg all day!! lol

  23. Just leading on from the "does that mean this is diet food.." Comment lol - i went on weight watchers and if you divide this cake in 12 its 7 points per portion. If like me its more likely to be divided by 8 then its 10.5 points per serving.

  30. A day late but the cake is in the oven after a slight panic, had all the ingredients ready to weigh and then thought we had eaten the last of the carrots with last nights tea!!! Found 3 carrots in the fridge -phew just enough!! Will take a pic when it is done - it smells delicious though.

  35. Made them yesterday with Noemie and they are delish! I made them into cupcakes and got 14 out of the batch. No photos though as they are just frosted without any additional decoration. I'm not doing the recipe box thing but just baking stuff whenever I can join in!
