Week 2 - Creamy Mushroom Soup with Homemade Chunky Croutons! *shopping list*

Theres something about the snow and cold that makes me want to eat comfort food - stews, broth, soups!! Give me something warm that doesnt take long to make and im happy! :)

With that, this week we have our first savoury recipe. Creamy mushroom soup with homemade chunky croutons. (i always find shop bought croutons are too hard and almost crack my teeth so these can be cooked however you like them!)

Shopping list for Week 2 is....


Soup...
1&1/2lb white mushrooms (if you like a stronger taste you can sub any other or mix)
1 small onion (diced finely)
2 cloves of garlic (crushed)
12 1/2fl oz chicken or veg stock
8 1/2fl oz milk
4 fl oz single cream
6 fl oz white wine or water (dependent on taste and preference - either work just as well)
1 tbs butter
1/2 tsp salt
pepper to taste
1/2 tsp oregano
1/2 tsp thyme

Croutons...
Uncut white bread
Oil spray (or sunflower oil to drizzle)
salt
pepper

  1. Lovely! I've made lots of soup lately - just right for this freezing weather. My kitchen sink is full of washing up at the moment as I've no hot water (burst pipe) but will be souping up as soon as I can.

  15. also i was thinking of doing a large batch would you recomend just dubleing the ingredants/ thanks again 9i wasnt sure if 12 fl ox of wine was to much ive never cooked with wine before, right me of to asda x

    Onetoomany - if you make it i just wouldnt add the cream or milk - when youre reheating it tomorrow add them then :)

    as for the wine i would maybe do half wine half water - i didnt use any wine in mine, more because the boys dont like the taste at all and it worked out fine :)
