I promise you wont buy another tin of mushroom soup - i know i wont! Ive taken lots of photographs again and to be honest its a 15 minute soup so looks a lot more work than it is - knock it up in a hurry for visitors or make a huge batch and freeze some for later :) The croutons can be baked then frozen too and taken out in batches as and when needed :)

In a large saucepan melt the butter and add the garlic, onions, herbs, salt and pepper. Stir frequently until the onions just start to brown.
Depending if you want smooth or chunky soup will depend on whether you want to hand blend or liquidise.

Add the milk and cream and simmer for another 5 minutes.

ReplyDeleteJust what we need in weather like this - a hearty warming soup. Shall make some as soon as I can get to the farm shop for mushrooms. As we live on a hill access is difficult in weather like this!!!!

ReplyDeleteI loved the flavor of this soup and mushrooms are my favorite but have to admit the soup was not my favorite. It was more the consistency of it as it was runnier than I would want in a cream based soup. If it didn't have cream then fair enough, if that makes sense. I blended about 3/4s of the mushrooms and left some chunks and even added a tsp of cornflour to thicken it a bit. Next time I will use heavier cream I think and perhaps less water or something. Kirk who is not keen on mushroom soup loved it though so maybe it's just me, lol! Still great to try it out!
