When life gives you lemons make lemonade...........or buy some lemonade and make this fab crunchy topped lemon cake instead!!
Im going to make this cake in a 7in tin and also as a traybake, choice is yours on how you make it :)
Shopping list for week 3 is ...
4oz soft margarine
6oz caster sugar
6oz self raising flour
1tsp baking powder
2 extra large eggs
4tbl sp milk
grated rind of 1 lemon
Juice of 1 lemon
4oz caster or granulated sugar
I have had questions about diet etc, heck im trying to incorporate fruit and veg in the balance here plus chocolate comes from beans so technically a vegetable and sugar comes from canes so technically is a variety of grass and grass has to be healthy no?? ;)
On a more serious note though there will be low fat recipes etc, these recipes dont have to be a staple in your diet, its literally so we can try some new things and incorporate them if you like into your regular eating habits - everyone deserves a treat now and again :) There will be recipes where there may be more bits on your shopping list too but i think its a good idea to have recipes where you dont have to go out and spend a fortune looking for things you have never heard of......its all about being comfortable in the kitchen and not stressing :)
