Country Cottage Pie with Cheesy Mash :) - Week 4

We had this last night and used the red wine version - if you would prefer not to i would just say miss it out altogether and not add any other liquid in place as there is a lot of liquid in this mix anyway.

Pre-heat oven to 180 degrees once the mince is simmering...

OK, Gather all your ingredients from Mondays shopping list... carrots and onions should be diced small...Heat the oil in a heavy based pan and brown the mince and onions on a medium heat...
Drain off the excess oil and mince fat and return to pan.
Add all of the ingredients EXCEPT the flour at this point and stir well...
Once it is all combined sieve the flour into the mix and again keep stiring - this will stop the flour from forming lumps... leave to simmer for 40minutes. *preheat oven*
While the mince is simmering prepare your potatoes...Gather all the ingredients :)
Boil until they are able to be broken easily with a fork.
I knew i NEEDED one of these mashers! lol Mash with your prefered tool...fork, masher, magic squishy thing!! LOL
yummmmmm...fluffyness!!
Add your onions, seasoning and soft cheese...
Mix until well blended.
Using a slatted spoon fill the bottom of your pie dish with the mince mix.
Place the mash mix ontop of your mince...
...spread and level with a fork.
Add your cheese and again season if you wish.
Bake in the oven for 30mins or until the cheese is browned and crispy around the edges.
Serve and enjoy :D

I didnt add the milk or cream to the potatoes as there was enough soft cheese to make it creamy :)

  4. That looks really good, I might have to try this afterall! Wasn't convinced I wanted to eat it but now... I tend to do better with desserts though, lol!!!

  5. I'm sat here whilst my potatoes boils and mince simmers.. I will pop it in the oven once ive collected the boys from school. I hope mine tastes as good as yours looks :O)

    the "magic masher thingy" is known as a RICER over here - they use it to turn everything to rice type pellets and nearly everyone has one - perfect for potatoes and fruit :)

  8. Just knew I should have got the ricer the last time I was in Lakeland........ But I also have my eye on the lovely cake tin in the shape of a huge cupcake!!!!!! Wonder which will be first in list!!!!
    Going to make this delicious looking dish for Friday nights dinner........ thanks for the lovely recipe.

  9. Heehee, I bought my husband a ricer a few years ago from John Lewis. He had seen it on Jamie Oliver and wanted one. We love it here, beautifully soft mashed potatoes with NO lumps.

  10. This as always been a good old stand-by recipe for many years in our famnily - its one of my comfort foods. I always mix in fresh breadcrumbs to the cheese on top, makes a nice crunchy topping.
