Im going to hand over to Kacy/Karen Chubb now as copy n paste the info she sent over for this weeks recipe.... I have included the photographs from my baking session and skipped the sultanas as the boys arent keen :)

Carrot and courgettes muffins
300g sugar
310g sunflower oil
4 whole eggs
275g plain flour
1 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp mixed spice
salt
250g grated courgette
250g grated carrot
50g sultanas
- Mix the dry ingredients together
- Mix the sunflower oil and eggs together in a separate bowl
- Beat the flour mix with the egg mix
then add the carrots, courgettes and sultanas
- Bake in muffin tins at 200 for 15 minutes
until they start to crack
